Plus, with just a few ingredients, easy to make, and even easier to clean up, it will quickly become a home run meal!<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-4215\" src=\"https:\/\/www.funtownrv.com\/blog\/wp-content\/uploads\/sites\/8\/2021\/05\/potatoes-and-sausage.jpg\" alt=\"camping recipe\" width=\"800\" height=\"600\" srcset=\"https:\/\/www.funtownrv.com\/blog\/wp-content\/uploads\/sites\/8\/2021\/05\/potatoes-and-sausage.jpg 800w, https:\/\/www.funtownrv.com\/blog\/wp-content\/uploads\/sites\/8\/2021\/05\/potatoes-and-sausage-300x225.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<h3>Campfire Sausage &amp; Potatoes<\/h3>\n<p><em>Ingredients:<\/em><\/p>\n<ul>\n<li>One pound fully cooked beef sausage<\/li>\n<li>3 pounds red potatoes<\/li>\n<li>1 white onion<\/li>\n<li>2 cups shredded cheddar cheese<\/li>\n<li>2-4 Tbs olive oil<\/li>\n<li>Paprika and ground thyme<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p><em>Other utensils needed:<\/em><\/p>\n<ul>\n<li>Cutting board<\/li>\n<li>Knife<\/li>\n<li>Large mixing bowl<\/li>\n<li>Dutch oven or cookie sheet<\/li>\n<li>Aluminum foil<\/li>\n<\/ul>\n<p><em>Directions:<\/em><\/p>\n<ul>\n<li>Preheat oven to 450 or get the campfire blazing!<\/li>\n<li>Dice potatoes and onion, and cut sausage into bit size chunks. Toss these three ingredients in a large mixing bowl.<\/li>\n<li>Drizzle with a little bit of oil. I prefer olive oil, but use what you like the best!<\/li>\n<li>Sprinkle with salt and pepper to taste, and season lightly with paprika and ground thyme.<\/li>\n<\/ul>\n<p>If you\u2019re cooking over the campfire, place this mixture in a Dutch oven with the lid in place, and hang over the campfire hook or place on campfire grate.<\/p>\n<p>If you\u2019re roasting it in the oven, prepare a cookie sheet with aluminum foil lining. Spread the mixture evenly over the pan, and roast in the oven until the potatoes are tender \u2013 about 25 minutes.<\/p>\n<p>For both cooking methods, once the potatoes are fork tender, sprinkle the mixture evenly with shredded cheese and remove from heat. Let the cheese melt onto the mixture and serve while warm.<\/p>\n<p>I used to double this recipe for dinner, but now I triple it \u2013 because my kids love the leftovers reheated for breakfast! Cheesy sausage potatoes are perfect for a hearty breakfast, and it\u2019s super handy to have tomorrow morning\u2019s breakfast squared away the second you clean up tonight\u2019s supper.
