Thanksgiving RV Cooking

 

Enjoying Thanksgiving on the road this year?  Maybe it’s not the traditional way to spend Thanksgiving, but it is definitely more scenic than Great Aunt Millie’s dining room.  Worried about how you can make your favorites (or your family’s favorites) on the road?  Not to worry.  We have some recipes that will turn your cozy RV Thanksgiving into a meal to remember.

 

The Bird

Did you know that you can cook a 12lb or less turkey in an RV oven?  Pro tip?  Buy a disposable tin pan that you can bend a bit to make it fit if you need to.  If you still aren’t sure about cooking the bird in the oven, how about a turkey breast in an instant pot?

Speaking of instant pots, they can be a time (and space) saver for delicious potatoes on your Thanksgiving table (or Thanksgiving picnic table).  Here are a few of our favorite recipes for easy RV cooking.

 

Recipe: Instant Pot Mashed PotatoesMashed Potatoes

  • 3 Pounds Potatoes 6 medium, Peeled and Sliced
  • Water to Cover Potatoes About 4-5 cups
  • 2 Teaspoons Salt Divided
  • ¼ Cup Butter
  • ¼ Cup Sour Cream
  • ¼ Cup Milk
  • ½ Teaspoon Garlic Powder
  • ½ Teaspoon Pepper

Instructions

  1. Place the peeled and sliced potatoes into the bottom of the instant pot.
  2. Cover with water and add 1 teaspoon of salt.
  3. Place the lid on the instant pot and set the valve to seal.
  4. Cook on manual pressure for 8 minutes.
  5. When the timer goes off, turn the instant pot off.
  6. Quick release the pressure from the pot.
  7. Drain the potatoes and return to the instant pot.
  8. Add the remaining salt, pepper, garlic powder, butter, milk and sour cream to the potatoes. Mash until smooth.
  9. Serve topped with parsley if desired.

 

Recipe: Instant Pot Candied Sweet PotatoesSweet Potatoes

  • 2lb orange flesh sweet potatoes, peeled and cut into 1-inch pieces
  • 1cup water
  • ¼ cup butter
  • ⅓ cup packed brown sugar
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ cup chopped pecans

Instructions

  1. In a 6-quart Instant Pot® insert, add potatoes and water. Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure for 3 minutes. Select CANCEL. Set pressure valve to VENTING to quick-release remaining pressure.
  2. Remove potatoes to strainer, and drain liquid. Select SAUTE; adjust to LESS. Add butter; stir occasionally 1 to 2 minutes to melt and coat the bottom of the pot. Stir in brown sugar, salt and cinnamon; cook and stir for 2 to 4 minutes or until mixture is smooth and bubbly.
  3. Add pecans and potatoes to the pot; gently stir for 1 to 2 minutes or until glazed and hot. Transfer to a serving dish to serve.

  • 2 (16 ounce) packages frozen cut green beans
  • 2 (10.75 ounce) cans cream of chicken soup
  • ⅔ cup milk
  • ½ cup grated Parmesan cheese 
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 (6 ounce) can French-fried onions, divided

Instructions

  1. Combine green beans, cream of chicken soup, milk, Parmesan cheese, salt, black pepper, and half the can of French-fried onions in a slow cooker.
  2. Step 2
    Cover and cook on Low for 5 to 6 hours. Top casserole with remaining French-fried onions to serve.

Don’t Forget…

Don’t forget when you are packing to grab some ready made salad that you can dress up with croutons, cheese and dried cranberries.  Speaking of cranberries, you can’t forget those.  If you are a purest, you’ll make them from scratch at home and keep them on ice until you reach your destination.  If not, go easy on yourself and grab a couple cans.  (You are camping after all!)  Desserts are the easiest thing to make ahead.  Pies travel if they are packed well.  Toss a can of whipped cream in your fridge before you leave and you are all set.
