All you need is a few, simple ingredients and you can dine on a spicy, sweet, and savory meal that will have everyone asking for seconds. 6 chicken breasts
1 can black beans
1 can sweet whole kernel corn
2 ½ cup salsa
1/2 peach preserves
2 servings prepared rice
Corn or flour tortillas
1 packet of taco seasoning
Lime wedges (optional)
Pat the chicken breasts dry with a paper towel. Cube chicken into large, bite-sized chunks and coat with the taco seasoning. Open all the canned veggies, drain, and rinse.
Heat a drizzle of oil over medium-high heat in a large pot. You can use the fire pit at your campsite and a Dutch oven if you prefer.
Sear the chicken until just brown and add in the corn, beans, salsa, and peach preserves.
Reduce heat to low, cover, and cook for 15-20 minutes to allow the flavors to marry — salt and pepper to taste.
